Repurposing T-day Leftovers

On Saturday my family and relatives celebrated Thanksgiving with a huge feast! There were tons of leftovers left (even with 20 people to feed), and we’ll be eating them until we leave for Boston. I repurposed some of the leftovers to make some new meals to eat so I’m not eating the same thing every day. 


Brunch: Breakfast Sandwiches with Fruit Salad

Leftovers: Rolls, Antipasto Tray Meat, Fruit Salad. Additions: Eggs


Breakfast (or dessert): Pumpkin Pie Shake

Leftovers: Pumpkin Pie, Ice Cream, Whipped Cream. Additions: Milk


Lunch: Pulled Turkey BBQ “Sandwich”

Leftovers: Turkey and Mashed Potatoes. Additions: BBQ Sauce

This is definitely a fork and knife sandwich. The concept is that your mashed potato acts as the bun. You can make potato patties and fry them up with a bit of olive oil. For the turkey, I shredded it and tossed it with some Kinders BBQ sauce. Assemble and enjoy the delicious mess. 


Dinner: Turkey Enchiladas

Leftovers: Turkey. Additions: Tortillas, Enchilada Sauce, Cheese

These were so good! Instead of chicken, use your leftover turkey (shredded or cubed).

I’ve always loved leftovers; and repurposing them made them that much better. Happy Thanksgiving! 😊❤️
